A soup that is as earthy and powerful as this requires a wine of contrast to the earthy flavours, weight to match the density of the soup, oak to manage the nuts, rice and onion and a core of fruit to counter the chlorophyl­l and energy of the green ingredient­s. The wine should ideally be earthy, not too much oak and retain a deliciousn­ess if enjoyed before, during and after the soup course. Boneline Amphitheat­re Cabernet Franc 2019 from Waipara has the core of fruit to contrast the earthy theme of the soup, tannins and acidity to respond to the seasoning, yoghurt or cream and lemon juice and chlorophyl­l-rich flavours from the greens.
