With New Zealand’s recent lockdown impacting the hospitalit­y heavily, organic coffee roastery Kōkako has released a special digital cookbook to lend a helping hand to local eateries. Featuring 55 recipes from top cafés and restaurant­s, including Ada, Cotto and Cibo, 90 per cent of the profits from the Hospo at Home e-book will be split between the contributo­rs and leftover profits will go to food charity, Everybody Eats. Standout dishes include Cotto’s famous kūmara ravioli, Ada’s basil buttermilk tomato salad, and Dedwood Deli’s signature chimichurr­i sauce. “Cafés and restaurant­s get hit hard with every lockdown, and yet when they’re open, those legends still greet their customers with a smile, spreading joy with beautiful coffee, delicious food and great yarns,” says Kōkako.
