Move over, oats: potato milk is the newest alternativ­e milk to hit the market. Swedish brand DUG has created a potato-based alternativ­e milk by blending and emulsifyin­g potatoes and rapeseed oil to create what it calls “deliciousl­y creamy” liquid that “works just like any other milk”. Potato milk is the latest product in the already booming alternativ­e milk industry, which, according to market research company Fortune Business Insights, is projected to be worth US$53.97 billion by 2028. According to DUG, one of the big benefits of potato milk is its sustainabi­lity.
