This time of year sees an abundance of fruits and vegetables in the garden and on the supermarke­t shelves. Often overlooked, marrow is a versatile summer squash that is well worth a place in your home cooking. Part of the same family as cucumbers, courgettes, melons and squash, marrow has a creamy, soft flesh with a mild flavour that makes it a delightful ingredient for roasts, curries and jams. The skin tends to be tough, so it pays to peel it if you’re using it in curries and stir-fries. Stuffed marrow is one of the best ways to enjoy this handy vegetable. In this case, keep the skin on, scoop out the flesh and stuff it with garlic, tomatoes, capsicum and spices before roasting until golden brown.
