Wholemeal Bread with Chicken Breast, Herb Quark & Cucumber
Serves 2
2 chicken breasts
3 cloves of garlic
2 tbsp olive oil
1 tbsp parsley
6 chive stalks
1 tsp thyme leaves
250g quark
1 tbsp lemon juice
30g lamb’s lettuce/baby spinach 100g cucumber
4 slices wholemeal bread Snow pea shoots, to serve
Dry chicken breasts with paper towel. Season well with salt and pepper. Halve the garlic. Heat olive oil in a frying pan. Fry chicken breasts and garlic over medium to high heat for 4 minutes on each side or until cooked through. Discard garlic, remove chicken breasts and leave to rest for about 3 minutes, wrapped in aluminium foil.
Meanwhile, chop herbs very finely. Mix well with quark and lemon juice. Season with salt and pepper.
Clean lettuce, wash and dry; then cut cucumbers into approximately 1cm cubes.
Spread bread with herb quark. Top with lettuce and cucumber cubes.
Unwrap the chicken breasts and cut diagonally into thin slices. Place on the bread with lettuce. Season with salt and pepper. Serve immediately, with snow pea shoots if desired.
