Sugar Base Cake
Serves 8
4 eggs
175g sugar
3 tbsp potato flour
75g oat flour
1 tsp baking soda
Butter for greasing tin Whipped cream and fruit, to serve
Preheat the oven to 180°C (160°C fan forced). Place the eggs in a bowl and whisk fast while you add the sugar, little by little. Sift the dry ingredients into the egg mixture and mix together carefully with a spatula. Grease the bottom and sides of a baking tin with butter and line with baking paper. Pour the mixture in the tin and bake for 45 minutes. Let the sugar base cool down then cover with whipped cream and fruit.
