Spice Cake

Serves 10

100g butter

180g sugar

3 eggs

120g buckwheat flour 120g gluten-free rice flour 100g millet flour

2½ tsp baking soda

1½ tsp cinnamon

1 tsp dried ginger

1 tsp ground clove

1 tsp ground ginger 150ml pure cream

2 tbsp orange marmalade

Preheat the oven to 210°C (190°C fan forced).

Melt the butter and whisk it together with the sugar. Whisk in one egg after another. Sift all the dry ingredient­s into the egg and sugar mixture. Stir in the cream and the marmalade.

Line a 1-litre bread tin. Bake for 40-45 minutes in middle of oven.
