Spice Cake
Serves 10
100g butter
180g sugar
3 eggs
120g buckwheat flour 120g gluten-free rice flour 100g millet flour
2½ tsp baking soda
1½ tsp cinnamon
1 tsp dried ginger
1 tsp ground clove
1 tsp ground ginger 150ml pure cream
2 tbsp orange marmalade
Preheat the oven to 210°C (190°C fan forced).
Melt the butter and whisk it together with the sugar. Whisk in one egg after another. Sift all the dry ingredients into the egg and sugar mixture. Stir in the cream and the marmalade.
Line a 1-litre bread tin. Bake for 40-45 minutes in middle of oven.
