Wholemeal Bread with Peanut Butter, Quark & Green Apple

Serves 2

1 small lemon

1 tsp sugar

4 tbsp quark

2 small green apples

1 tbsp sunflower oil

1 tbsp butter

3-4 tbsp agave syrup

4 wholemeal bread slices

4 tbsp peanut butter

6-8 mint leaves

1-2 tsp chia seeds, to garnish

Half the lemon and squeeze the lemon juice out. Mix half of the juice with sugar and quark. Cut apples into thin slices and toss in remaining lemon juice.

Heat sunflower oil and butter in a frying pan, fry apple slices on medium to high heat on each side for about 1 minute until golden brown. Add 2 tbsp agave syrup. Toss twice. Set pan aside.

Toast the bread, then spread with peanut butter and quark.

Top with warm apple slices and mint.

Garnish with chia seeds and the rest of the agave syrup.
