Grain Stick with Cottage Cheese, Oranges & Blueberries
Serves 2
6 tbsp cottage cheese
2 tbsp agave syrup
2 tbsp macadamia nuts
125-150g blueberries
2 small oranges
4 sourdough slices
Basil leaves, to garnish
Mix cottage cheese with 1 tbsp agave syrup. Chop macadamia nuts coarsely and toast in a pan without oil until golden brown. Remove nuts. Put blueberries in the same pan and toss once. Remove from heat.
Peel the oranges and cut the into thin slices.
Toast the bread then spread with cottage cheese. Cover with orange slices, warm blueberries and macadamia nuts.
Garnish with the rest of the agave syrup and basil.
