This dish is delicious, full of fragrant spices and textures. The crunchy filo pastry packages all this together and looks fantastic. The spices of coriander and cardamom along with the lifted scent and flavour of saffron require a wine with equally delicate attributes. The recipe also uses almond and ginger along with softly textured chicken pieces to carry flavours and supply protein. These, too, require a wine of just enough weight and intensity, so a young, fresh and vibrant pinot noir is the answer. Fleeting Glimpse by Alexia has a core of deliciousl­y ripe, fresh fruit flavours and is loaded with pinosity. With this dish the flavours of red cherries and barrel spices, fresh red flowers, vanilla, cashew nut and chalky textured tannins weave throughout the basteeya, delivering contrast and umami.
