If you’re a kitchen whizz and can make fresh pasta, be sure to add your twist to this dish with spices and stone-ground flour. If there’s no time to make fresh pasta then aim for some local artisan-made fettuccini instead. This recipe is simple and full of goodness. The broccoli and basil give an earthy quality while the garlic, sausage and parmesan deliver intensity. Once the pesto is blitzed and folded through fresh al dente pasta it’s time to serve with a glass of Domaine-Thomson Explorer Pinot Noir 2021 from Central Otago. Flavours of fresh, dark red cherry, roses and velvet-textured raspberry flesh contrast the earthy feel and flavours in the pesto, the core natural fruit sweetness also offers contrast to the sausage. The wine’s tannins and acidity will soften just a little when embraced by the olive oil and parmesan cheese, completing a harmonious and delicious combinatio­n. RRP $35.
