GASTRONOMY GLORY
An exciting new development is set to put Spain on the food technology map. The winning design for the Gastronomy Open Ecosystem in San Sebastián has been announced, set to be a food innovation hub where start-ups, researchers and chefs will develop forward-thinking solutions around alternative proteins, food waste and agricultural robotics. The design by Bjarke Ingels Group features a 9,000m2 sweeping structure, made to look like an extension of the dramatic landscape, with a series of terraces and windows that give onlookers a peek inside the kitchens and labs. “We have had the great pleasure of collaborating with one of the most brilliant minds in modern gastronomy with our design for René Redzepi’s NOMA in our native Copenhagen,” says Bjarke Ingels of BIG-Bjarke Ingels Group.
