A delicate fan-shaped variety of the fungi family, they grow in clusters in humid, dark areas usually at the base of tree stumps. Pink oyster mushrooms are a blushed variety – popular at farmers’ markets, they have both a delicate texture and flavour. They’re perfect for eating raw, or gently cooked. Due to their delicate structure, they are best eaten soon after harvest. Mushrooms are easy to grow at home. You can find mushroom growing kits in garden stores and online.
