Things go better with leeks

For a simple enhancemen­t to add to the flavour of leeks, add butter, olive oil, walnut oil, creamy sauces or sour cream.

To lend depth to a dish with leeks, add lemon zest, mustard, curry spices, wine and capers.

Herbs that make great companions for leeks are thyme, parsley, chervil and tarragon.

Leeks are wonderful when added to dishes with eggs and cheese, especially goat cheese, parmesan and gruyère.

Add leeks to the pot for a subtly flavoured stock or bone broth.

Toss in a chopped leek when roasting potatoes, fennel, kumara or pumpkin to add a little interest.
