LEMON ENERGY BALLS

1 heaped scoop Nuzest Clean Lean Protein Smooth Vanilla ½cup cashew nuts ½cup almonds ½cup desiccated coconut, plus more for rolling ¼tsp sea salt ¼cup almond butter ½cup dates ½tsp vanilla extract Juice of 1 large lemon Zest of one large lemon
1 Using a blender, or food processor, blend the almonds, cashew nuts, coconut, sea salt and Clean Lean Protein into a fine crumb.
2 Add the almond butter, dates, lemon zest, lemon juice and vanilla extract. Pulse to combine.
3 Take a tablespoon of the mixture roll it into balls and then coat in coconut. Store in the fridge for up to 5 days or freeze up to 4 weeks.
