There was a time when people were so delighted with their politician­s that they named baking after them, such as this slice named after Sir Winston Churchill. These days, it would be hard to find a John Key Loaf or Trump Toffee, so let’s make the most of this slice, which tastes amazing.

250g butter, softened

250g sugar

2 eggs

2 tsp baking powder

3 cups flour

2 tbsp cocoa

FILLING

2 tbsp icing sugar

cup milk

cup condensed milk

21/ cups coconut

1 Preheat oven to 180°C. Cream the butter and sugar, then mix in the eggs. Mix in the dry ingredient­s, then press half the mixture into a slice tin.

2 Mix the filling ingredient­s together, then spread over the base. Cover with the remaining mixture. Bake for 25-30 minutes.
