CHURCHILL SLICE
There was a time when people were so delighted with their politicians that they named baking after them, such as this slice named after Sir Winston Churchill. These days, it would be hard to find a John Key Loaf or Trump Toffee, so let’s make the most of this slice, which tastes amazing.
250g butter, softened
250g sugar
2 eggs
2 tsp baking powder
3 cups flour
2 tbsp cocoa
FILLING
2 tbsp icing sugar
cup milk
cup condensed milk
21/ cups coconut
1 Preheat oven to 180°C. Cream the butter and sugar, then mix in the eggs. Mix in the dry ingredients, then press half the mixture into a slice tin.
2 Mix the filling ingredients together, then spread over the base. Cover with the remaining mixture. Bake for 25-30 minutes.
