There was a time when peo­ple were so de­lighted with their politi­cians that they named bak­ing af­ter them, such as this slice named af­ter Sir Win­ston Churchill. These days, it would be hard to find a John Key Loaf or Trump Tof­fee, so let’s make the most of this slice, which tastes amaz­ing.

250g but­ter, soft­ened

250g su­gar

2 eggs

2 tsp bak­ing pow­der

3 cups flour

2 tbsp co­coa

FILLING

2 tbsp ic­ing su­gar

cup milk

cup con­densed milk

21/ cups co­conut

1 Pre­heat oven to 180°C. Cream the but­ter and su­gar, then mix in the eggs. Mix in the dry ingredients, then press half the mix­ture into a slice tin.

2 Mix the filling ingredients to­gether, then spread over the base. Cover with the re­main­ing mix­ture. Bake for 25-30 min­utes.
