Easy-peasy shelling

-

According to one of my trusty old books, don’t shell peas before cooking them. Simply wash the pods well, then drop into a pot of boiling water. As they boil, the pods burst and come to the top with the peas going to the bottom. Skim the pods off and you will find the peas have a better flavour. You can do this for beans as well.
