SWEET DISCOVERIE­S FROM AN OFTEN OVERLOOKED CUISINE

APPLESAUCE RAISIN CAKE

SERVES 12

1 cup sugar

2 eggs, beaten

1 cup unsweetene­d or

homemade applesauce

1 cup buttermilk

2 tbsp melted butter

2 cups plain flour

1 tsp baking soda

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp kosher salt

1 cup raisins

2 tbsp icing sugar

1 Preheat oven to 160°C. Grease a 3-litre Bundt pan and set aside.

2 In a large bowl, beat sugar, eggs, applesauce, buttermilk and melted butter. 3 In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg and salt. Fold the dry ingredient­s into the wet ingredient­s and stir until just moistened. Fold in the raisins.

4 Spoon the cake batter into the prepared Bundt pan and spread to ensure the mixture is distribute­d evenly. Bake for 40- 45 minutes or until a toothpick inserted into the deepest section of the cake comes out clean. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely. Place the icing sugar in a fine-mesh sieve and shake over the cake to dust.
