Punch with decorative ice cubes
From the second Journal of Agriculture Cookery Book comes a refreshing cold drink to help farewell the last warm days of summer as we head into autumn.
PUNCH
½ cup sugar
½ cup water
½ cup tea
Juice of 3 lemons
Juice of 3 oranges
1 cup any fruit juice
750ml soda water
750ml ginger ale
750ml any other soft drink
DECORATIVE ICE CUBES
Water to fill ice- cube trays Pieces of fruit – maraschino cherries, strawberries, raspberries, pineapple cubes, chopped apricots, lemon or orange wedges, as preferred 1 To make the ice cubes, fill the trays with fresh water – plain, coloured or fruit-flavoured. In each, place a piece of fruit as preferred. Alternatively, you can use sprigs of mint, which incidentally gives any fruit drink a very pleasant flavour. If there is to be a party where a large number of ice cubes will be needed, several trays can be made beforehand and kept frozen, thus ensuring the unfortunate latecomers won’t be greeted with tepid drinks.
2 To make the punch, boil the sugar and water together until the sugar has dissolved. Add the brewed tea and fruit juices, then put the mixture in the fridge until ready to serve. 3 Just before serving, add the soda water, ginger ale and a soft drink of your choice.
