Salmon & feta puffs
MAKES 6
Start Mum’s day with a hit of goodness- giving salmon. Packed full of healthy fats, as well as eggs for protein, these little gems make a great breakfast treat.
4 large eggs
50ml cream
Small bunch of coriander,
roughly chopped
100g feta, crumbled
Pinch of salt and black pepper
150g hot-smoked salmon,
broken into chunks
2 tbsp capers
1 Heat oven to 180°C.
Grease a six-hole muffin tin well with butter or oil.
2 Whisk together the eggs and cream. Stir in the coriander, feta and seasoning. Spoon or pour into the muffin holes and top each with a chunk of salmon.
3 Bake for 10-12 minutes until puffed up and the egg has set.
4 Serve immediately, sprinkled with capers for a wonderful burst of saltiness.
