GINGER FUDGE SLICE
This simple, sweet slice is from Recipes my Mother Taught
Me, a collection published by the Christchurch Presbyterian Social Service Association.
125g butter
1 cup sugar
1 tbsp golden syrup
½ cup milk
¼ tin condensed milk
1 packet gingernuts
½ cup chopped walnuts
½ tsp vanilla essence Desiccated coconut
1 In a saucepan, melt the butter, sugar, golden syrup, milk and condensed milk. Simmer for half an hour, stirring occasionally to make sure it doesn’t burn.
2 Process the gingernuts to a fine crumb. Stir the gingernuts, walnuts and vanilla into other ingredients.
3 Press into a Swiss roll tin and sprinkle with coconut.
