GINGER FUDGE SLICE

Me, a collection published by the Christchur­ch Presbyteri­an Social Service Associatio­n.

125g butter

1 cup sugar

1 tbsp golden syrup

½ cup milk

¼ tin condensed milk

1 packet gingernuts

½ cup chopped walnuts

½ tsp vanilla essence Desiccated coconut

1 In a saucepan, melt the butter, sugar, golden syrup, milk and condensed milk. Simmer for half an hour, stirring occasional­ly to make sure it doesn’t burn.

2 Process the gingernuts to a fine crumb. Stir the gingernuts, walnuts and vanilla into other ingredient­s.

3 Press into a Swiss roll tin and sprinkle with coconut.
