PARMESAN SEED & OAT CRACKERS INGREDIENTS
½ cup pumpkin seeds
½ cup sunflower seeds
1⁄ 3 cup sesame seeds
1⁄ 3 cup black chia seeds
1⁄ 3 cup linseed (flaxseed)
1 cup rolled oats
¾ cup white flour, sifted
2 tsp salt
1 cup Parmesan cheese, grated
½ cup rice bran oil
1 cup cold water
METHOD:
1 Preheat the oven to 170°C.
2 Mix all of the seeds, rolled oats, sifted flour, salt and Parmesan cheese in a bowl. Add the oil and water, then mix together well.
3 Cut two sheets of baking paper to the length of your baking tray.
4 Tip 1⁄ 3 of the mixture onto one of the sheets. Place the second sheet on top and, using a rolling pin, roll out as thinly as possible (around 3-4mm thickness). Remove the top layer of baking paper and trim the edges of the mixture to form a large rectangle.
5 Repeat the process with the remaining mixture, as required.
6 Place the rectangle on your tray (with the paper underneath) and bake for about 20 minutes, or until crisp and golden.
7 Remove from the oven and slice into 5cm squares. Place on a wire rack to cool.
8 Serve as soon as the crackers are cool or store them in an airtight container.
