• I must ad­mit, I’ve been known to use the Christmas cake not eaten from the pre­vi­ous year.

• Meringues are so easy to make, just beat to­gether 1 egg white, 1 tsp vine­gar, 1/2cup su­gar and 1 tsp water un­til the su­gar has dis­solved and the mix­ture is very stiff. Drop spoon­fuls onto a tray cov­ered in bak­ing pa­per and place in a 150oC oven un­til the meringues are dry. They will keep for some time in a sealed con­tainer for when you wish to use them. They’re al­ways handy to have on hand.
