TASTY CHICKEN BITES

New Zealand Woman’s Weekly - - GREEN GODDESS -

This comes from Tui Flower’s New Zealand Woman’s Weekly Favourite Recipes book from 1976, when cooks of­ten used packet soup. I’m not a packet-soup kind of cook, but I have to say these turned out to be rather de­light­ful. A great ad­di­tion to a plat­ter of nib­bles.

1½ cups flour

1 packet cream-of-chicken

soup pow­der

1 tsp bak­ing pow­der

100g but­ter

1/2 cup cream

1 Sift the flour, soup pow­der and bak­ing pow­der. Cut in the but­ter un­til the mix­ture re­sem­bles fine bread­crumbs.

2 Mix in the cream to make a soft dough. Turn onto a floured board. Roll out to 3mm in thick­ness. Stamp out shapes us­ing cookie cut­ters or cut into di­a­monds.

3 Place on an un­greased oven tray. Bake at 180oC for 10 min­utes. Note: no ex­tra sea­son­ing nec­es­sary.
