LEMON GINGER SYRUP

This is a lovely refreshing drink for a hot day, and so easy to make and store in the fridge, ready for some soda water.

MAKES ABOUT 8 DRINKS ¼ cup root ginger, peeled

and chopped

½ cup water

½ cup fresh lemon juice

¼ cup honey

1 Blend the ginger with the water until smooth. Strain through a sieve, pressing on the solids to yield ½ cup of ginger juice. Add the lemon juice and honey, stirring well.

2 To make the soda, fill a glass with ice and 2 tbsp of the lemon ginger syrup, then top with soda water.

The syrup will keep in the fridge for up to a week in an airtight container.
