This fruity drink is ideal for a hot summer day or as a starter for a garden party. Makes 6 to 8.
INGREDIENTS • 600g seedless watermelon, peeled, chopped • ¼ cup maple syrup • 375ml tequila • ½ cup lime juice • flaky sea salt, ice cubes and thinly sliced green chilli to serve
METHOD Blitz the watermelon, maple syrup, tequila and lime juice in a blender.
Make a pile of salt on a plate. Dip the rims of glasses in water then dip in the salt to coat. Put a few ice cubes in each glass then pour the margarita mix over and garnish with chilli. Olivia Andrews/cuisine
