WA­TER­MELON MARGARITAS

This fruity drink is ideal for a hot sum­mer day or as a starter for a gar­den party. Makes 6 to 8.

INGREDIENTS • 600g seed­less wa­ter­melon, peeled, chopped • ¼ cup maple syrup • 375ml tequila • ½ cup lime juice • flaky sea salt, ice cubes and thinly sliced green chilli to serve

METHOD Blitz the wa­ter­melon, maple syrup, tequila and lime juice in a blender.

Make a pile of salt on a plate. Dip the rims of glasses in wa­ter then dip in the salt to coat. Put a few ice cubes in each glass then pour the mar­garita mix over and gar­nish with chilli. Olivia An­drews/cui­sine
