Use fresh herbs plucked straight from the gar­den to make these tasty condi­ments. To make a savoury herb may­on­naise, you need: • 2 red chill­ies, de­seeded, chopped • 2 small gar­lic cloves • 1 cup fresh co­rian­der leaves • 1 cup fresh pars­ley leaves • ½ cup may­on­naise • 1 tea­spoon le­mon zest • 2 ta­ble­spoons fresh le­mon juice • salt and freshly ground black pep­per.

Place chill­ies, gar­lic, co­rian­der, pars­ley, may­on­naise and le­mon in a food pro­ces­sor and process un­til smooth. Sea­son with salt and pep­per to taste. The may­on­naise should be made a few hours in ad­vance to al­low the flavours to meld. This is a great may­on­naise to to fancy up a ba­con, let­tuce and to­mato sand­wich next time you have guests for lunch, or take it to your next pot luck.

An­other great condi­ment to take to a bar­be­cue or pot luck is herb and spinach salsa verde. You need: • 2 gar­lic cloves • 2 packed cups fresh co­rian­der leaves • 2 packed cups fresh pars­ley leaves • 1 packed cup spinach leaves • ½ cup olive oil • 3 ta­ble­spoons white vine­gar • salt and freshly ground black pep­per.

Finely chop gar­lic in a food pro­ces­sor. Add the co­rian­der, pars­ley and spinach and pulse un­til coarsely chopped. Add oil, vine­gar and 2 ta­ble­spoons wa­ter and process un­til just com­bined, not smooth. Sea­son with salt and pep­per. •
