NZ Gardener - Gifts from the Gardens
CHEESES, SAUCES & other herb morsels
Have more herbs than you know what to do with? Put them to good use in these herby recipes.
Use fresh herbs plucked straight from the garden to make these tasty condiments. To make a savoury herb mayonnaise, you need: • 2 red chillies, deseeded, chopped • 2 small garlic cloves • 1 cup fresh coriander leaves • 1 cup fresh parsley leaves • ½ cup mayonnaise • 1 teaspoon lemon zest • 2 tablespoons fresh lemon juice • salt and freshly ground black pepper.
Place chillies, garlic, coriander, parsley, mayonnaise and lemon in a food processor and process until smooth. Season with salt and pepper to taste. The mayonnaise should be made a few hours in advance to allow the flavours to meld. This is a great mayonnaise to to fancy up a bacon, lettuce and tomato sandwich next time you have guests for lunch, or take it to your next pot luck.
