Cut flax leaves with a sharp knife close to the base of the plant. Trim off the hard part at the base. Re­move the edges. Each leaf should give four strips to work with. Soften the strips by plac­ing the blunt edge of a knife against the dull side of the strip and pull the strip against it on a 90° an­gle like you’re curl­ing a rib­bon. Scrape both di­rec­tions.
