This citrus pickle is as easy as mixing lemon, ginger, chillies and salt.
A QUICK AND SIMPLE RECIPE that also works if you substitute lemon with lime.
INGREDIENTS 6 lemons, roughly chopped 5 large green chillies, thinly sliced 1 thumb-sized knob of ginger, julienned 6 teaspoons salt
ARRANGE INGREDIENTS EVENLY in layers, in sterilised jars. Build up the layers until your jars are each two-thirds full (leaving enough space to stir). Sprinkle a teaspoon of salt at the top. Close the lid. Leave them on the bench (not in the fridge). Stir (or shake jar) once a day for 1-2 weeks.
