This citrus pickle is as easy as mix­ing lemon, ginger, chill­ies and salt.

Lemon pickle

A QUICK AND SIM­PLE RECIPE that also works if you sub­sti­tute lemon with lime.

IN­GRE­DI­ENTS 6 lemons, roughly chopped 5 large green chill­ies, thinly sliced 1 thumb-sized knob of ginger, juli­enned 6 tea­spoons salt

AR­RANGE IN­GRE­DI­ENTS EVENLY in layers, in ster­ilised jars. Build up the layers un­til your jars are each two-thirds full (leav­ing enough space to stir). Sprin­kle a tea­spoon of salt at the top. Close the lid. Leave them on the bench (not in the fridge). Stir (or shake jar) once a day for 1-2 weeks.
