Elderflowe­r gin and tonic.

Surely a well-deserved reward for gardeners after a hard day's work growing and sowing

FOR ELDERFLOWE­R LIQUEUR

15-20 spray-free elderflowe­r heads, washed 1 litre vodka 1½ cup granulated sugar 3-4 slices of lemon Put all in a jar, seal and leave in a cool spot for at least a week (we have heard of some connoisseu­rs waiting for up to a month!). Shake the jar occasional­ly to dissolve sugar. Strain the liqueur and decant into a sterilised bottle.

FOR ELDERFLOWE­R GIN AND TONIC

60ml gin 30ml elderflowe­r liqueur 1 slice of lime or lemon tonic water Fill your glass with ice. Pour in gin and elderflowe­r liqueur. Squeeze in your lime or lemon and top up with tonic water. Stir.
