FRUITY PUNCH
Ingredients • 2 bunches lemon balm• 2 bunches mint • 1 litre unsweetened pineapple juice • Juice of 2 lemons • 1 lemon, cut into slices • Sparkling wine (or sparkling water), to taste
Gently bruise the lemon balm and mint leaves to release their flavour. Place in a large glass pitcher, and add the fruit juices and lemon slices. Mix, pressing on the leaves with the back of a spoon to release more flavour, then chill overnight.
Pour into glasses and top up with sparkling wine or water (to taste). Add a sprig of fresh lemon balm and serve.
LEMON BALM ICE CUBES
These are great for summer drinks, like a fruity punch. Freeze fresh leaves in ice cube trays with water.
