BLUEBERRY & COCONUT BIRCHER MUESLI
This make-ahead breakfast is packed with healthful goodness.
For two servings, place a cup of rolled oats in a medium bowl. Add 11/ cups
2 Almond & Coconut Milk (we used Sanitarium So Good), several tablespoons each of desiccated coconut and ground almonds, 2 teaspoons white chia seeds, a good pinch of ground cinnamon and about a cup of fresh or frozen blueberries. Gently stir, cover and chill overnight. When ready to serve, divide between serving dishes and top with extra berries and lightly toasted coconut chips or sliced almonds. Serve with liquid honey and natural yoghurt.
