WARM RASPBERRY & CHILLI DRESSING

This is particularly good in dishes with venison, beetroot or asparagus. Place
100g fresh or frozen raspberries, chilli paste to taste, a crushed clove of garlic,
11/2 tablespoons cider vinegar and 1/4 cup olive oil in a small pan. Cook over a low heat until the berries fall apart. Season to taste and whisk well before serving warm.
Makes about 3/4 cup, serves 4-6
