CRISPY PRAWNS WITH LIME DIPPING SAUCE

Lightly whisk 2 egg whites. Add a crushed clove of garlic, a pinch of chilli powder,
1/4 cup each coconut thread and cornflour, 1 tablespoon fish sauce and a good sprinkle of black and white sesame seeds. Add
400g large raw prawns (tails on). Chill 30 minutes then fry in vegetable oil until golden. Serve with the dipping sauce made by combining 1 cup mayonnaise with a little coconut cream, a crushed clove of garlic, the zest and juice of 2 limes, sweet chilli sauce to taste and a good handful of chopped coriander leaves. Season to taste and chill until needed.
