Classic recipe: TABBOULEH

Prepare 1 1/ 4 cups bulgur and combine with: 8 halved cherry tomatoes, 1/ 2 a telegraph cucumber (thinly sliced), 1 small diced red onion, 2 cloves crushed garlic, 4 tablespoon­s olive oil, the juice and zest of 1 lemon, and 1/ 2 cup each chopped mint, basil and parsley leaves. Season with salt and pepper, cover and leave in a cool spot for 2-3 hours before serving. Serves 6
