Quick Matcha Ice Cream

matcha pow­der, des­ic­cated co­conut, vanilla ice cream, co­conut chips

Whisk 1 rounded ta­ble­spoon of matcha pow­der with 2 ta­ble­spoons hot wa­ter and al­low to cool. Toast ½ cup des­ic­cated co­conut and cool. Al­low 2 litres of goodqual­ity vanilla ice cream to just soften then quickly fold through the liq­uid matcha and toasted co­conut. Cover and re–freeze. Serve sprin­kled with toasted co­conut chips.
