Date & Almond Pilaf

butter, oil, onion, garlic, ginger, cumin, cinnamon, turmeric, rice, dates, almonds, coriander, chilli

Heat a tablespoon each of butter and oil in a pan and sauté a finely chopped onion, 2 cloves of garlic and a thumb of ginger until softened. Add ½ teaspoon each ground cumin, cinnamon and turmeric and season well. Cook several minutes then mix in 2 cups cooked rice, ½ cup chopped pitted dates and some sliced almonds. Garnish with coriander and chilli flakes. Serve with plain yoghurt and flatbread. Serves 2-4 >
