but­ter, oil, onion, gar­lic, gin­ger, cumin, cin­na­mon, turmeric, rice, dates, almonds, co­rian­der, chilli

Heat a ta­ble­spoon each of but­ter and oil in a pan and sauté a finely chopped onion, 2 cloves of gar­lic and a thumb of gin­ger un­til soft­ened. Add ½ tea­spoon each ground cumin, cin­na­mon and turmeric and sea­son well. Cook sev­eral min­utes then mix in 2 cups cooked rice, ½ cup chopped pit­ted dates and some sliced almonds. Gar­nish with co­rian­der and chilli flakes. Serve with plain yo­ghurt and flat­bread. Serves 2-4 >
