Pan­cake-mak­ing tips

Mix in­gre­di­ents gen­tly, just un­til com­bined; an over-worked bat­ter can re­sult in tough pan­cakes.

Us­ing both oil and but­ter for greas­ing the pan pre­vents the but­ter from burn­ing.

Play around with the cook­ing tem­per­a­ture; medium to low is a good place to start but wait for the pan to fully heat up be­fore start­ing to cook. If you’re not sure, make a small test pan­cake.

Aim for the pan­cake to brown evenly and gen­tly while al­low­ing enough time for the bat­ter to cook through in the mid­dle. It may take a pan­cake or two to get the tem­per­a­ture just right for an even gold­en­brown colour.

Flip only once; flip­ping more makes pan­cakes de­flate. Once bub­bles ap­pear, wait un­til they start to burst then flip.
