Mix ingredients gently, just until combined; an over-worked batter can result in tough pancakes.
Using both oil and butter for greasing the pan prevents the butter from burning.
Play around with the cooking temperature; medium to low is a good place to start but wait for the pan to fully heat up before starting to cook. If you’re not sure, make a small test pancake.
Aim for the pancake to brown evenly and gently while allowing enough time for the batter to cook through in the middle. It may take a pancake or two to get the temperature just right for an even goldenbrown colour.
Flip only once; flipping more makes pancakes deflate. Once bubbles appear, wait until they start to burst then flip.
