Sil­ver­beet & Pea Mash

Greens mashed with potato makes a de­li­cious and creamy all-in-one veg­etable side dish.

1 small potato, peeled and cut into thin slices 1 clove gar­lic, peeled

4 cups frozen baby peas

4 large sil­ver­beet leaves, stems re­moved,

very finely chopped

2 ta­ble­spoons but­ter

¼ cup sour cream

Freshly grated nut­meg, sea salt and

black pep­per Place potato and gar­lic in a saucepan with about ½ cup water and bring to the boil. Cook sev­eral min­utes.

Add peas, cover pot and bring to the boil, stir­ring once or twice.

Re­move lid, add but­ter and sil­ver­beet and stir over heat for sev­eral min­utes un­til the sil­ver­beet is cooked.

Take off heat and add sour cream. Sea­son to taste with nut­meg, salt and pep­per. Roughly mash us­ing a hand-held blender or potato masher, en­sur­ing there are no lumps of potato. Serves 4
