Pea, Prawn & Potato Salad
potatoes, peas, courgette, pea shoots, snow peas, asparagus, pea tendrils, coriander, prawns, olive oil, lime juice
Arrange decoratively on a serving plate some cooked new potatoes, peas (both cooked and raw for texture), ribbons of raw courgette, pea shoots, snow peas, blanched asparagus spears, pea tendrils and fresh coriander leaves. Season well and top with cooked prawns. Dress with olive oil and a good squeeze of lime juice.
