Ar­range dec­o­ra­tively on a serv­ing plate some cooked new pota­toes, peas (both cooked and raw for tex­ture), rib­bons of raw cour­gette, pea shoots, snow peas, blanched as­para­gus spears, pea ten­drils and fresh co­rian­der leaves. Sea­son well and top with cooked prawns. Dress with olive oil and a good squeeze of lime juice.
