Pea & Broad Bean Pesto

peas, broad beans, gar­lic, mint, pis­ta­chios, parmesan, lemon, olive oil

Process to­gether ½ cup each peas (fresh or thawed frozen) and shelled broad beans with a clove of gar­lic, a small hand­ful each of mint leaves, pistachio nuts and grated parmesan, and the finely grated zest of a lemon and a good squeeze of lemon juice. Driz­zle in olive oil un­til the mix­ture comes to­gether. Sea­son to taste. Serve with pita crisps, on toasted bread or as a side to lamb. >
