Salmon & Potato Salad

new potatoes, red onion, gherkins, capers, herbs, lemon, aioli, cured or smoked salmon

Place cooked, cooled new potatoes in a bowl with a finely chopped red onion, several diced gherkins, chopped capers to taste, and herbs such as dill, parsley or coriander. Season well with salt and pepper and squeeze over the juice of half a lemon. Toss with enough home-made or quality bought aioli to coat the salad. Top generously with sliced smoked or beetroot-cured salmon.
