Raspberry Tiramisu

raspberrie­s, caster sugar, mascarpone, vanilla custard, Savoiardi (lady finger) biscuits, brandy

Blend 1 cup raspberrie­s with 2 tablespoon­s sugar until smooth. Whisk 250g mascarpone and 1½ cups custard together until smooth. Arrange a few raspberrie­s in the bases of 6 glasses. Arrange a layer of biscuits to cover the berries; sprinkle biscuits with a little brandy. Top with mascarpone custard and then a layer of raspberry purée. Serves 6
