Strawberry Buttermilk Scones

strawberri­es, caster sugar, self-raising flour, cold butter, buttermilk, berry jam, whipped cream

Combine 1 cup sliced strawberri­es and 2 tablespoon­s sugar in a bowl; set aside. Put 3 cups flour into a large bowl. Rub in 75g cubed butter until the mixture resembles fine breadcrumb­s. Add 1¼ cups buttermilk and, working quickly, mix with a table knife to just combine. Gently mix in the strawberri­es. Tip dough onto a floured board; pat out into a 3cm thick circle then cut into 8-10 wedges. Separate wedges and place on a greased oven tray. Bake at 220°C for 15 minutes, or until golden brown. Serve hot with jam and cream. Makes 8-10 scones
