Korean Beef Noodle Bowls
Perfect for weeknight dinners, this recipe is a simple way to enjoy the flavours of Korean barbecue at home. Made easy by using beef mince instead of the traditional strips of meat, it tastes a little bit sweet, a little bit spicy and a whole lot delicious.
500g beef mince
4 large garlic cloves, crushed
2 tablespoons finely grated fresh ginger 3 tablespoons dark soy sauce
2 tablespoons soft brown sugar
1 tablespoon sesame oil
2 teaspoons chilli sauce (I use Sriracha), plus
extra to serve
TO SERVE
Cooked noodles or rice
3 spring onions, thinly sliced Chopped fresh coriander 2 tablespoons toasted sesame seeds Kimchi
In a large frying pan set over mediumhigh heat, brown the mince for 3-5 minutes, breaking it up with a wooden spoon as it cooks. Stir in the garlic and ginger and cook for 2-3 minutes more.
Add the soy sauce, brown sugar, sesame oil and chilli sauce, and stir to combine; simmer for 1-2 minutes more.
Serve the beef over hot noodles or rice, sprinkled with spring onions, coriander and sesame seeds. Serve extra chilli sauce on the side and kimchi, if desired.
