One-pot Prawn, Spinach & Risoni Pasta
Great for busy weeknights, this all-in-onepot pasta meal full of succulent prawns, fresh spinach and basil is a family favourite in my house – once you've made it, you’ll know why.
3 cloves garlic, crushed
400g can chopped tomatoes
2 cups chicken stock
1 cup risoni (orzo) pasta
400g large prawn cutlets, deveined 1 tablespoon chopped oregano 100g baby spinach
Fresh basil leaves, to garnish
Finely grated parmesan cheese, to serve
Heat a little oil in a large frying pan over a medium heat. Add garlic and sauté for 1 minute until fragrant. Stir in the tomatoes, stock and risoni, and season with salt and pepper.
Bring the mixture to a boil and then turn down the heat to simmer for 10 minutes, stirring regularly so the pasta doesn’t stick to the pan. Stir in the prawns and oregano and simmer for 10 minutes more until the pasta is just tender to the bite and the prawns are cooked.
Stir in the spinach to just wilt. Adjust seasoning to taste. Serve garnished with basil, with parmesan on the side to sprinkle over. Serves 4
