Grilled Pear, Cheese & Salami Salad

cider vinegar, extra virgin olive oil, shallot, pears, rocket, sliced salami, blue cheese, chopped roasted almonds

Make the dressing by placing 2 tablespoon­s vinegar, ¼ cup oil and 1 finely chopped shallot in a lidded jar; shake vigorously to combine. Cut 2 firm pears into wedges. Brush the pear wedges with a little dressing and then grill for 1-2 minutes on each side. Place 100g rocket, pears, and 100g salami cut in strips in a salad bowl. Drizzle with the remaining dressing and toss well to combine. Scatter with 100g crumbled cheese and a handful of chopped almonds. Serve immediatel­y. Serves 4
