Doris Plum and Orange Muffins
These zingy orange muffins dotted with chunks of Doris plum are wonderful served warm with butter – or whipped cream.
100g butter, melted, plus extra for greasing 100g caster sugar
2 size 7 eggs
½ teaspoon vanilla extract
Zest of 1 orange
60g plain yoghurt
300g plain flour, sifted
1 teaspoon baking powder, sifted
1 teaspoon ground cinnamon, sifted 400g can Doris plums, drained and stones
removed
Preheat the oven to 180°C. Grease a muffin tin with butter or line with paper cases.
Whisk together the butter, sugar and eggs in a large bowl. Add the vanilla, orange zest and yoghurt and mix until well combined.
In a separate bowl, combine the flour, baking powder and cinnamon.
Add the dry mixture to the wet mixture and gently fold through. Do not overmix.
Spoon one-third of the mixture into the prepared muffin tins. Break the plums into chunks and add one-third to the muffin tins. Repeat twice more.
Bake for 20-26 minutes, or until cooked through. Small muffins will take less time to cook. Makes 6 large or 9 small muffins
