Gochujang Tofu

1 tablespoon gochujang paste

1 tablespoon light soy sauce

1 tablespoon mirin

Juice of 1 lime

300g firm tofu, sliced thickly

Peanut or sunflower oil, to pan fry

2 tablespoon­s toasted sesame seeds

Sprigs of fresh coriander

Make a gochujang sauce by whisking together the paste, soy sauce, mirin and lime juice. Set aside. Heat a little oil in a frying pan and cook tofu slices for 2-4 minutes on each side until browned. Briefly drain on paper towels before serving, drizzled with gochujang sauce. Garnish with sesame seeds and coriander. Best served with simple sides like steamed rice and Asian greens. Serves 2
