DON’T throw the fruit away if you have used fresh plums. You will end up with a bunch of divine-tast­ing, shriv­elled-up lit­tle jewels that you can ei­ther eat as they are, or de-stone and use to make plum pud­dings or Christ­mas cake. They can be dried in the oven on a low tem­per­a­ture but who wants to lose all that al­co­hol? •

PLACE whole plums into ice cube trays, then cover with choco­late to make deca­dent dam­son gin choco­lates. •

IF YOU have used frozen plums, you are likely to end up with more of a plum paste. This can be kept in the fridge and added to cakes, cheese­cakes, smooth­ies, crum­bles and yoghurt for an out-of-this-world al­co­holic plummy hit.
