• KEEP your empty gin bottle and decant your damson gin back into it. •
DON’T throw the fruit away if you have used fresh plums. You will end up with a bunch of divine-tasting, shrivelled-up little jewels that you can either eat as they are, or de-stone and use to make plum puddings or Christmas cake. They can be dried in the oven on a low temperature but who wants to lose all that alcohol? •
PLACE whole plums into ice cube trays, then cover with chocolate to make decadent damson gin chocolates. •
IF YOU have used frozen plums, you are likely to end up with more of a plum paste. This can be kept in the fridge and added to cakes, cheesecakes, smoothies, crumbles and yoghurt for an out-of-this-world alcoholic plummy hit.
